Sodium triphosphate (STP), also sodium tripolyphosphate (STPP), or tripolyphosphate (TPP) is an inorganic compound with formula Na5P3O10. It is the sodium salt of the polyphosphate penta-anion, which is the conjugate base of triphosphoric acid. It is produced on a large scale as a component of many domestic and industrial products. STPP is a preservative for seafood, meats, poultry, and animal feeds. It is common in food. The United States Food and Drug Administration lists STPP as "GRAS(Generally Recognized As Safe)."

DESCRIPTION
Sodium Tripolyphosphate occurs as white, slightly hygroscopic granules, or as a powder. It is anhydrous or contains six molecules of water of hydration. It is freely soluble in water, but insoluble in alcohol. The pH of a 1:100 aqueous solution is about 9.5
Function: Emulsifier; sequestrant.
