Glycerol monostearate, commonly known as GMS is a monoglyceride commonly used as an emulsifier in foods. It is a white, odorless, and sweet-tasting flaky powder that is hygroscopic. Chemically it is the glycerol ester of stearic acid. GMS is a food additive used as a thickening, emulsifying, anticaking, and preservative agent; an emulsifying agent for oils, waxes, and solvents; a protective coating for hygroscopic powders; a solidifier and control release agent in pharmaceuticals; and a resin lubricant. Glyceryl monostearate (GMS) is an effective emulsifier used in the baking industry. It is also used in cosmetics and hair-care products. It can also be used as an additive in plastic.

DEFINITION
Mixture of monoacylglycerols, mainly monostearoylglycerol, together with variable quantities of di- and triacylglycerols. It is obtained by partial glycerolysis of vegetable oils mainly containing triacylglycerols of palmitic (hexadecanoic) or stearic (octadecanoic) acid or by esterification of glycerol with stearic acid. The fatty acids may be of vegetable or animal origin.

diacylglycerols: 30.0 per cent to 45.0 per cent;
triacylglycerols: 5.0 per cent to 15.0 per cent.
