Calcium propanoate or calcium propionate has the formula Ca(C2H5COO)2. It is the calcium salt of propanoic acid. Calcium propionate is a naturally occurring organic salt formed by a reaction between calcium hydroxide and propionic acid. It is commonly used as a food additive, known by E-number E282. It help preserve various food products, like bread, biscuits, cheeses, powdered milk, whey, yogurt, soft drinks, fruit drinks, beers, malt beverages, wine, cider, hot dogs, ham, lunch meats, etc. Calcium propionate has been approved for use by the Food and Drug Administration (FDA), World Health Organization (WHO). FDA labels it as GRAS, “generally recognized as safe”. Calcium propionate can be used as a fungicide on fruit.

IDENTIFICATION
A. A solution of Calcium Propionate (1 in 20) imparts a transient yellowish red color to a nonluminous flame.

ASSAY
Procedure
Sample solution: 4 mg/mL of Calcium Propionate
Analysis: While stirring, preferably with a magnetic stirrer, add 30 mL of 0.05 M edetate disodium from a 50-mL burette to 100 mL of the Sample solution. Add 15 mL of 1 N sodium hydroxide and 300 mg of hydroxy naphthol blue indicator and continue the titration to a blue endpoint. Each mL of 0.05 M edetate disodium is equivalent to 9.311 mg of calcium propionate (C6H10CaO4).
Acceptance criteria: 98.0% to 100.5% on the anhydrous basis

DESCRIPTION
Calcium Propionate occurs as white crystals or as a crystalline solid. The pH of a 1:10 aqueous solution is between 7.5 and 10.5. One-gram dissolves in about 3 mL of water.
Function: Preservative; mould inhibitor.
