Sodium bicarbonate or Sodium hydrogen carbonate, commonly known as baking soda or bicarbonate of soda, is a chemical compound with the formula NaHCO3. It is a salt composed of a sodium cation (Na+) and a bicarbonate anion (HCO3-). Sodium bicarbonate is a white solid that is crystalline, but often appears as a fine powder. In cooking, baking soda is primarily used in baking as a leavening agent. Sodium bicarbonate mixed with water can be used as an antacid to treat acid indigestion and heartburn. It has several uses in laboratory, pharmaceutical and chemical industries. Sodium bicarbonate is also used as a cattle feed supplement.

ASSAY
Procedure
Sample: 3 g
Analysis: Mix the Sample with 100 mL of water, add methyl red and titrate with 1 N hydrochloric acid. Add the acid slowly, with constant stirring, until the solution becomes faintly pink. Heat the solution to boiling, cool, and continue the titration until the faint pink color no longer fades after boiling. Each mL of 1 N hydrochloric acid is equivalent to 84.01 mg of sodium bicarbonate.
Acceptance criteria: 99.0% to 100.5% on the dried basis.

Insoluble Substances:
Sample solution: Dissolve 1 g in 20 mL of water.
Acceptance criteria: The resulting solution is complete and clear.
Carbonate (where it is labeled as intended for use in hemodialysis): To pass the test.

CHARACTERS
Appearance: White or almost white, crystalline powder.
Solubility: Soluble in water, practically insoluble in ethanol (96 per cent). When heated in the dry state or in solution, it gradually changes into sodium carbonate.

IDENTIFICATION
A. To 5 ml of solution S add 0.1 ml of phenolphthalein solution. A pale pink colour is produced. Heat; gas is evolved and the solution becomes red.
B. It gives the reaction of carbonates and bicarbonates.
C. Solution S gives reaction of sodium.

TESTS
Solution S: Dissolve 5.0 g in 90 ml of carbon dioxide-free water and dilute to 100.0 ml with the same solvent.
Appearance of solution: Solution S is clear and colourless.
Carbonates: The pH of freshly prepared solution S is not greater than 8.6
Chlorides: Maximum 150 ppm
Sulphate: Maximum 150 ppm

DESCRIPTION
Sodium Bicarbonate occurs as a white, crystalline powder. It is stable in dry air, but it slowly decomposes in moist air. One gram dissolves in 10 mL of water. It is insoluble in alcohol. Its solutions, when freshly prepared with cold water without shaking, are alkaline to litmus. The alkalinity increases as the solutions stand, are agitated, or are heated.
Function: pH control agent; leavening agent.

REQUIREMENTS
Identification: A 1:10 aqueous solution gives positive tests for Sodium and for Bicarbonate.
Assay: Not less than 99.0% and not more than 100.5% of NaHCO3 after drying.
