Calcium ascorbate is an organic calcium salt resulting from the replacement of the proton from the hydroxy group of ascorbic acid by a calcium ion. Calcium ascorbate used as a chemical preservative is generally recognized as safe when used in accordance with good manufacturing or feeding practice. As a food additive, it has the E number E 302. It is approved for use as a food in several countries. It is used as an antioxidant. Calcium ascorbate can extend the shelf life of food and beverage products and protect against deterioration of color, flavor, and overall quality.
