Butylated hydroxytoluene or BHT, also known as dibutylhydroxytoluene, is a lipophilic organic compound, chemically a derivative of phenol, that is useful for its antioxidant properties. BHT is widely used to prevent free radical-mediated oxidation in fluids (e.g. fuels, oils) and other materials, and the regulations overseen by the USA FDA—which considers BHT to be GRAS "generally recognized as safe"—allow small amounts to be added to foods. Identification: To 10 mL of a solution in methanol (1 in 100,000) add 10 mL of water, 2 mL of sodium nitrite solution (3 in 1000), and 5 mL of dianisidine dihydrochloride solution (1 in 500), prepared by dissolving 200 mg of dianisidine dihydrochloride in a mixture of 40 mL of methanol and 60 mL of 1 N hydrochloric acid: an orange-red color develops within 3 minutes. Add 5 mL of chloroform, and shake: the chloroform layer exhibits a purple or magenta color, which fades when exposed to light.
Congealing temperature: not lower than 69.2, corresponding to not less than 99.0% of C15H24O.

Identification: Dissolve 200 mg of 3,3′-dimethoxybenzidine dihydrochloride in a mixture of 40 mL of methanol and 60 mL of 1 N hydrochloric acid. Add 5 mL of the resulting dianisidine solution to 10 mL of water and 2 mL of a 3:100 solution of sodium nitrite. Add this solution to 10 mL of a 1:100,000 solution of sample methanol. An orange-red color appears within 3 min. Add 5 mL of chloroform, and shake. The chloroform layer exhibits a purple or magenta color that fades when exposed to light.
