Potassium metabisulfite, K2S2O5, also known as potassium pyrosulfite, is a white crystalline powder with a pungent odour. It is mainly used as an antioxidant or chemical sterilant. It is used as a food additive, also known bu E-number of E224. Potassium metabisulfite is a used in wine or must additive, in which it forms sulfur dioxide (SO2). Sulfur dioxide is a disinfectant. It also acts as a potent antioxidant, protecting both the color and delicate flavors of wine. Potassium metabisulfite is also used in the brewing industry to inhibit the growth of wild bacteria and fungi. It is used in some pickles and lemon juice as a preservative.

Back titrant: 0.1 N sodium thiosulfate

Analysis: Transfer the Sample to a glass-stoppered conical flask containing 50.0 mL of 0.1 N iodine and swirl to dissolve. Allow to stand for 5 min, protected from light, and then add 1 mL of hydrochloric acid. Titrate the excess iodine with 0.1 N sodium thiosulfate adding 3 mL of starch as the endpoint is approached.

Calculate the percentage of SO2 in the portion of Sample taken:

V B = Back titrant volume consumed by the Blank (mL)
V S = Back titrant volume consumed by the Sample (mL)

Iron:
Test preparation: Dissolve 1.00 g in 14 mL of dilute hydrochloric acid (2 in 7) and evaporate on a steam bath to dryness. Dissolve the residue in 7 mL of dilute hydrochloric acid (2 in 7), and again evaporate to dryness. Dissolve the resulting residue in a mixture of 2 mL of hydrochloric acid and 20 mL of water. Add 3 drops of bromine, and boil to expel the bromine. Cool, and dilute with water to 47 mL.
Acceptance criteria: NMT 10 ppm

CHARACTERS
Appearance: White or almost white powder, or colourless crystals.
Solubility: Freely soluble in water, slightly soluble in ethanol (96 per cent).

IDENTIFICATION
A. pH (see Tests).
B. To 5 ml of solution S (see Tests), add 0.5 ml of 0.05 M iodine. The mixture is colourless and gives reaction of sulphates.
C. Solution S gives reaction of potassium.

TESTS
Solution S: Dissolve 5.0 g in carbon dioxide-free water R and dilute to 100 ml with the same solvent.
Appearance of solution: Solution S is clear and colourless.
pH: 3.0 to 4.5 for solution S.
Thiosulphates: To 2.00 g add 25 ml of a 42.5 g/l solution of sodium hydroxide and 75 ml of water. Shake until dissolved and add 10 ml of formaldehyde and 10 ml of acetic acid. After 5 min, titrate with 0.05 M iodine using 1 ml of starch solution. Carry out a blank titration. The difference between the volumes consumed in the 2 titrations is maximum 0.15 ml.

Zinc: Maximum 25 ppm.

DESCRIPTION
Potassium Metabisulfite occurs as white or colorless, free flowing crystals, crystalline powder, or granules. It gradually oxidizes in air to the sulfate. It is soluble in water, but it is insoluble in alcohol. Its solutions are acid to litmus.
